Black Walnut Brittle

Modified from a recipe by Earl Barney, former member of the Northern Nut Growers Association of Nebraska and uncle to staff member Jen Ries. Earl left the planet in 2018 but left behind his lovingly tended landscape full of nut trees, here to stay for future generations to enjoy!

  • 1 cup sugar

  • ½ cup brown rice syrup

  • 1½ cups black walnuts

  • 1 tsp butter

  • 1 tsp vanilla extract

  • 1 tsp baking soda

In a saucepan, heat sugar and syrup until they boil and sugar dissolves. Stir in nuts, and boil a few more minutes. Add butter and vanilla, and continue boiling and stirring until the mixture is golden brown. Add baking soda and stir gently until light and foamy. Pour onto lightly buttered cookie sheet.

Let it cool, then break into pieces, and store in an airtight container.
