Lehigh - Organic

yellow skin, light yellow flesh A late-season yellow that produces high yields of large tubers. Alice harvested one that weighed in at almost 18 ounces, and the second largest tuber from the same plant weighed 14 ounces! Has produced consistently high yields across diverse growing regions and conditions. Excellent storage potential. Holds its shape well boiled, making it a great choice for soups and stews, but also great fried. Lehigh new potatoes mash up creamy, dense and delectable.

Released jointly in 2007 by Cornell, Penn State and UMaine and named after Lehigh County in Pennsylvania, where the field trials were conducted. “Lehigh” is derived from the Lenape term Lechauweki or Lechauwekink, meaning “where there are forks” (e.g. in Lehigh River).

Resistant to blackspot bruise and scab. Indigenous Royalties.
