Long the farm apple of Europe: every backyard had a Boskoop. This red version is a similar big blocky fruit largely patched and netted with russet over a red base. Every chef in Europe knows Boskoop—it cooks beautifully. The taste is outstanding. Quite tart right off the tree, but after storage, the acidity mellows and it becomes a very good table apple. Keeps well.
