Every recipe has an ingredient that made me pause and say, “Wow, I never thought of using that.” They don’t demand hours of meticulous fussing with foams and emulsions and tiny tweezers; just loving attention to the freshest, often foraged, ingredients. The book is organized by season with recipes for all parts of a meal.
